Capturing the cool evening breeze from the highest ridge on the property the Pinot grows fed only by fresh rainfall and fertile gravely soils. Hand selected grapes are picked over several days making sure to only select the ripest grapes. Fermented in 4 open fermented using different techniques and some selected whole bunches of grapes to make the most complex wine. The winemaker plunges each wine every 4 to 6 hours for up to 15 days to add flavour and structure to the wine. Stored in the very best French Oak barrels the wine is matured for 18 months with 15% new oak. Giving the best balance of flavour and character a Pinot Noir can possibly have.

TASTING NOTES

This Pinto Noir has a lot of complexity, excellent balance and good quality in this wine. It shows, ripe fresh red and black cherry fruit aromas with varietal concentration and appealing fragrance. The palate has structure, is at the fuller bodied end of the pinot spectrum, well balanced tannins add length, red cherry blood orange fruits wed to silky tannins with lovely roundness, well judged oak builds the wine but never dominates creating a very complete complex finish.
