This is a special release. We are always experimenting with different growing techniques as we strive for a signature style of Merlot which will gain renown to match our benchmark Sauvignon Blanc. This year we reduced the cropping rate to a few bunches per vine by assiduous shoot and bunch thinning. The result, coupled with a long ripening season takes us a long way down the road we wish to travel. The wine shows classic flavours of black olive, dark chocolate and a touch of cigar box. As with other wines it will benefit if decanted half an hour or so before dinner.
